This bold and fragrant blueberry tea is a love letter to Lake Francis, nestled deep in New Hampshire’s North Country. Each summer, we head to our summer home in Pittsburg, where the water is cold, the air is sweet, and wild blueberries grow low along the lakeshore. The days are spent casting for lake trout to fill the winter freezer, and the evenings end with tea, something baked, and the scent of pine in the air.

North Country Wild Blueberry Tea brings those moments to life. It blends rich organic black tea with the sweet, tangy flavor of wild blueberry—lifted by elderberry, hibiscus, and raisin for a well-rounded cup. Whether served hot on cool mornings or iced on a sunny porch, it captures summer in the north with every sip.

How to Brew

  • 1 tsp per cup
  • Temperature: 212°F
  • Steep time: 3–5 minutes
    Add a touch of sweetener to bring out the berries. Delicious hot or iced.

From Our Summer Table: Lizzy Lane’s Blueberry Buckle

This is our favorite way to use up those fresh-picked wild blueberries. Soft, buttery cake, crumbly streusel topping, and a burst of berry in every bite. We like it warm with tea, eaten with the windows open and feet tucked up on a bench.

Streusel Topping

  • ½ cup unsalted butter, melted
  • ⅓ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 tsp cinnamon (or cardamom)
  • 1¼ cups all-purpose flour
  • Pinch of salt

Stir together all ingredients until crumbly. Set aside.

For the Buckle

  • 2¼ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • ¾ cup granulated sugar
  • 6 tbsp unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 2 tsp lemon zest
  • 2 tsp vanilla extract
  • 3 cups fresh blueberries, divided
  1. Preheat oven to 375°F. Grease a 9x9-inch baking dish.
  2. Stir together flour, baking powder, and salt. In a separate bowl, beat butter and sugar until creamy. Add eggs one at a time.
  3. Gradually mix in flour mixture, alternating with milk. Stir in zest, vanilla, and 2 cups of blueberries.
  4. Spread batter into pan, top with remaining 1 cup of blueberries. Sprinkle with streusel.
  5. Bake 40–45 minutes or until a toothpick comes out clean. Cool 20 minutes before slicing.
